Parmesan Herb Chicken

This dish is perfect for people who have fructose malabsorption. It's also perfect for people who don't! I ate it quite frequently when I was on my elimination diet. I decided to make it again recently. I don't know why I don't make it more often, as it's delicious, gluten-free and low-carb. It's adapted from a recipe I found on allrecipes. I serve this with mashed potatoes, salads and a Sauvignon Blanc. Incredibly easy and yummy. Bon appetite!


Parmesan Herb Chicken

serves 4

Ingredients
2/3 cup grated Parmesan cheese
1 tablespoon minced fresh parsley (or 2 tsp. dried) 
2 teaspoons dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
4 boneless, skinless chicken breasts
3 Tbsp. butter or margarine, melted

Directions
  1. Preheat oven to 400° F.
  2. In a shallow dish, combine the first five ingredients. Dip chicken in butter, then coat with Parmesan mixture. Place in a greased 13" x 9” pan.  Sprinkle any remaining cheese on top, then drizzle any remaining butter.
  3. Bake, uncovered, for 25-30 minutes or until the juices run clear.
