It has been so hot lately and I had such a craving for a frozen treat. I took a look at some of the novelty ice cream treats at the store, but couldn't find anything that met my criteria: all natural, chocolate, and the appropriate serving size. Something under 150 calories. Not to be found. It was time to make my own.
makes 8 pops
1/4 cup (or up to 1/3 cup) pure cane sugar
1/4 cup unsweetened cocoa powder
3 tablespoons cornstarch
1/8 teaspoon salt
2 cups lactose-free milk
1 teaspoon vanilla
- In a large saucepan, combine the first four ingredients. Slowly stir in milk. Cook over medium heat, stirring constantly until thick and bubbly. Remove from heat and stir in vanilla.
- Carefully pour into popsicle molds and freeze. This makes enough for 8 4-oz. pops.
