Easy Ground Beef Stroganoff

Easy Beef Stroganoff (Gluten-Free, Low-Fructose)

I love me some stroganoff. It’s so creamy and filling. It’s very satisfying in the winter, but I even find myself making it in the summertime. Mostly because it’s so easy. If you love stroganoff too, check out my recipe for Slow Cooker Chicken Stroganoff from Scratch. This beef recipe is adapted from one found on allrecipes.com. I make it much healthier, draining the fat from the meat and skipping some of the butter. I highly suggest using grass-fed beef. I serve this recipe over gluten-free pasta or rice.

Easy Beef Stroganoff
(Gluten-Free, not Low-FODMAP)
serves 4

Easy Beef Stroganoff (Gluten-Free, Low-Fructose)

Ingredients

4 ounces fresh mushrooms, sliced (if tolerated)
1 tablespoon butter
1 pound lean ground beef
2 tablespoons gluten-free all-purpose flour
1 cup beef broth
1/2 cup sour cream
1/4 teaspoon salt
1/4 teaspoon ground black pepper

Directions

  1. In a large skillet, cook mushrooms in 1 tablespoon of butter over medium heat until soft; remove from pan.
  2. Using the same pan, cook ground beef until browned; drain. Mix in flour. Stir in beef broth, and cook until slightly thickened. Add mushrooms; stir in sour cream. Season with salt and pepper. Continue cooking until sauce is hot, but not boiling. Serve over gluten-free pasta or rice.

    2. I just want to thank you for your blog. I was diagnosed with fructose malabsorption five years ago. My three-year-old, while not officially diagnosed, also has issues with fructose. I've been able to tolerate wheat fairly well, so gluten-free hasn't been an issue before, but a good friend of mine recently found out that gluten was what was causing her pain and suffering. I am loving that your recipes are both gluten free AND low fructose, so I can cook for both of us. More than just the recipes, I really enjoy reading about your food journey. I feel less alone in my own journey. By the way, this recipe was delicious, and very simple.

    8. I am new to the low FODMAP diet. This recipe looks SO good, but I think I read that sour cream is high in fodmaps. Is that true? Thank you ๐Ÿ™‚

       
    9. Yes, you are correct, sour cream is higher in FODMAPs. I used to make this recipe when I thought that I could eat lactose. I guess it just depends on your tolerance level. You could try adding a little heavy cream instead, which is lower in lactose. Sorry for the confusion! Some of my older recipes, while low in fructose (for fructose malabsorption), are not low in FODMAPs.

    11. Sour cream used to be on the outs for me but I found a lactose-free sour cream from Green Valley Organics. I haven't eaten sour cream in years because of problems and now, I'm loving my sour cream! I can't wait to try this recipe (now that I've "fixed" the whole sour cream/low FODMAPs thing). Yeah!
