Low-FODMAP Italian Seasoned Sausage / Delicious as it Looks

 

This time of year makes me yearn for creamy comfort foods, like soup, stew and pasta dishes. One of my favorite pasta dishes right now is Creamy Italian Turkey Penne. I’m excited to share the recipe with you, but first, I wanted to share my recipe for Italian sausage, which is the main ingredient. You can make this sausage with either ground pork, ground turkey or ground chicken. I tend to use ground turkey most frequently. It is lean and I like the flavor.

First, place the meat and seasonings in a large skillet. Keep in mind that some ground meats, especially ground pork, are already seasoned with some salt. If that is the case, use less salt. I like to grind the fennel seeds up finely in a coffee grinder so the flavor distributes evenly throughout the meat.

Stir it up really well.

Brown and crumble the meat over medium-high heat.

Drain and you’re done!

Italian Seasoned Sausage

Ingredients

  • 1 lb. ground pork, turkey, or chicken
  • 2 teaspoons Italian herb blend (I like Frontier brand or the recipe in my cookbook)
  • 1/2 teaspoon crushed or finely ground fennel seeds
  • 1 tablespoon FODY Garlic-Infused Oil
  • 1/4 - 1/2 teaspoon salt*
  • 1/4 teaspoon ground black pepper

Instructions

  • Place the ground pork, turkey or chicken in a large skillet. Add the Italian herbs, fennel seeds, garlic-infused oil, salt and pepper. Stir well to combine.
  • Place the skillet over medium-high heat and cook and crumble the mixture until no longer pink and completely cooked.
  • Drain grease and use as desired.

Notes

*Some ground meats already have salt added, so less salt should be used in that case.

  1. I made the Hearty Meatloaf recipe from your cookbook again tonight and my husband who has no digestive issues couldn't stop raving about it, especially the sauce. I tried a few meatloaf recipes years ago and never found anything we liked until we found the one in your cookbook. We are also big fans of the Chicken Penne and the Marinated Pork Chops. Your blog and cookbook have been a godsend to a low FODMAP newbie like me. Thanks for what you do!

    I made this using ground turkey and used some some of it for a homemade pizza on 7 grain flatbread & other pizza fixings. It was excellent! Tasted just like italian sausage! I froze the rest for future pizzas!
