Just in time for back-to-school! I’m finally sharing this recipe that I created last year and never got around to posting. I’m hoping that this new schedule of posting a new recipe every Thursday will help keep me motivated to keep up with my blog. And then recipes like this won’t get lost and go unpublished.


I like these because they are a bit more interesting than your typical wrap. With a kick and Mexican inspired ingredients, they take a classic turkey wrap up a notch. I was inspired by chipotle mayo that you can find in the supermarket. This mayo gives you that smoky spiciness, but without FODMAPs such as onion and garlic.

Low-FODMAP Smoked Turkey Wraps with Spicy Mayo

Smoked Turkey & Spinach Wraps with Spicy Mayo

Ingredients

  • 1/4 cup mayonnaise
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon ground cumin
  • pinch cayenne pepper (more or less to taste)
  • 8 soft corn tortillas
  • ½ cup shredded Monterey Jack cheese
  • 1 cup baby spinach
  • 12 slices of thinly sliced smoked turkey
  • 4 tomato slices, sliced into thin strips

Instructions

  • In a small bowl, stir together the mayo, paprika, oregano, cumin and cayenne.
  • Spread 1 ½ teaspoons of the spicy mayo onto each tortilla.
  • Sprinkle 1 tablespoon shredded cheese on top of the mayo for each tortilla.
  • Place a thin layer of baby spinach on top of the cheese, followed by 3 slices of smoked turkey.
  • Place a strip of tomato down the middle of the tortilla and roll it all up. Eat right away or wrap with plastic wrap and pack in your lunch box!

  1. I found your Low-FODMAP Cookbook years ago when my son was having G I issues. I cannot tell you how much, through the following years, it has helped BOTH of us. I keep hoping I will find that you have written another one. However, I can see you are a very busy young woman
